Focaccia is a type of Italian flatbread known for its soft, airy interior and crispy crust, traditionally flavored with olive oil and herbs

Ingredients

  • 600g all-purpose flour
  • 1 spoon sugar
  • 1 spoon salk
  • 1 spoon dry yeast or 30g fresh yeast
  • 500ml water

Topping

  • fresh mozzarella
  • cherry tomatoes
  • olive oil
  • rock salt
  • oregano

Instructions

  • Combine the flour, sugar, salt and yeast
  • Add the water and knead until smooth
  • Let it rest for 20 minutes
  • Knead again until dough is smooth and a bit elastic (add more flour if needed)
  • Let it rest for 12 hours outside the fridge
  • Let it rest for 12 hours inside the fridge
  • Put the dough in an oiled baking tray. Massage the dough with more olive oil
  • Add the fresh mozzarela, tomatoes, salt and oregano
  • Let it rest for 1 hour
  • Bake for about 50 minutes at 200ÂșC
