Panettone

It takes a little time, but it’s not hard to do.
Ingredients
Yeast mix
- 60g flour
- 60g yeast
- 15g sugar
- 80ml warm water
Dough
- 500g flour
- 100g butter
- 90g sugar
- 4 egg yolks (or 3 whole eggs)
- 5g salt
- 120ml warm water
- a few drops (~10) of panettone essence (optional)
- 20g honey (optional)
- bittersweet chocolate (for chocottone)
- candied fruits and raisins (for classic panettone)
Instructions
- Combine the yeast mix and let it grow for ~ 15 minutes
- Combine the dough ingredients in a planetary mixer
- Add the yeast and mix in high speed for ~ 10 minutes
- Let it rest for ~ 50 minutes
- Add the chocolatte/fruits and divide the dough in the panettone tins
- Let it rise again for about 50 minutes. Preheat the oven to 180 ºC (~356ºF)
- Bake for about 35 minutes, until the crust is golden
- While still warm put a barbecue stick at the base of them and turn them upside down, supported by a bowl, this will make them not wither
