Panettone is an Italian type of sweet bread and fruitcake, originally from Milan, Italy, usually prepared and enjoyed for Christmas and New Year. It is also very popular in Brazil, where you can often find it during whole year.

Ingredients

Yeast mix

  • 60g flour
  • 60g yeast
  • 15g sugar
  • 80ml warm water

Dough

  • 500g flour
  • 100g butter
  • 90g sugar
  • 4 egg yolks (or 3 whole eggs)
  • 5g salt
  • 120ml warm water
  • a few drops (~10) of panettone essence (optional)
  • 20g honey (optional)
  • bittersweet chocolate (for chocottone)
  • candied fruits and raisins (for classic panettone)

Instructions

  • Combine the yeast mix and let it grow for ~ 15 minutes
  • Combine the dough ingredients in a planetary mixer
  • Add the yeast and mix in high speed for ~ 10 minutes
  • Let it rest for ~ 50 minutes
  • Add the chocolatte/fruits and divide the dough in the panettone tins
  • Let it rise again for about 50 minutes. Preheat the oven to 180 ºC (~356ºF)
  • Bake for about 35 minutes, until the crust is golden
  • While still warm put a barbecue stick at the base of them and turn them upside down, supported by a bowl, this will make them not wither
